Refined Rapeseed Oil

Refined rapeseed oil is expressed and solvent-extracted from the seed of Brassica napus, then neutralised, bleached, deodorised and usually winterised to prevent clouding in cold storage. It carries CAS number 8002-13-9 and the INCI name Brassica Campestris Oil. Commercial food-grade rapeseed is grown from double-low varieties bred to hold erucic acid below two percent, the same crop marketed as canola in North America and Australia. Its fatty acid profile is the reason for its position in food manufacture. Oleic acid accounts for roughly 60 percent, linoleic for about 20 percent and alpha-linolenic for 9 to 11 percent, while saturated fat sits near 7 percent, the lowest of any major commodity oil. The high monounsaturated share gives reasonable frying stability, but the alpha-linolenic fraction has three double bonds and oxidises quickly, which is what limits the oil's fry life relative to palm olein and can produce a characteristic off-note if the oil is pushed too hard or stored badly. It is used as a frying and cooking oil, in dressings, mayonnaise and sauces, in margarine and spread blends, in bakery and as a general blending oil. Industrially it is a major biodiesel feedstock and is used in lubricants and personal care.
