Refined Soybean Oil

Refined soybean oil is solvent-extracted from the seed of Glycine max, then degummed, neutralised, bleached and deodorised. It carries CAS number 8001-22-7 and the INCI name Glycine Soja Oil. Degumming is a distinctive step in soybean processing because the crude oil is rich in phospholipids, which are recovered at that stage and sold separately as lecithin. Soybean oil is a polyunsaturated soft oil. Linoleic acid makes up roughly 51 percent of its fatty acids, oleic around 23 percent, palmitic about 11 percent and alpha-linolenic 7 to 8 percent. Polyunsaturated chains carry two or three double bonds, each one a site where oxygen can attack, so the oil is markedly less stable under heat and storage than monounsaturated or saturated fats. The alpha-linolenic fraction in particular is responsible for the reversion flavour, a characteristic grassy or painty note that can develop even at low peroxide values. Manufacturers manage this with antioxidants, nitrogen blanketing, light-barrier packaging or high-oleic varieties bred to reduce the unstable fractions. It is used in dressings, sauces, mayonnaise and margarine, in bakery and general food processing, and as a frying oil where cost matters more than fry life. Industrially it is a major biodiesel feedstock and is used in alkyd resins, coatings and inks.
